Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp grated ginger
- 4 cups chopped carrots
- 4 cups vegetable broth
- 1/2 cup coconut milk
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook for 2-3 minutes, until the onion is translucent.
- Add the grated ginger and chopped carrots to the pot and stir to combine.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and simmer for 20-25 minutes, until the carrots are soft and tender.
- Use an immersion blender or transfer the soup to a blender and puree until smooth.
